This is a recipe I got from Fisun, a friend of mine. She is vegeterian. Preparing few dishes like that as a side dish or as a starter, it is quite refreshing and easy to make.

Preparation time: About 20 mins
Cooking time      : 10 mins
Serves for           : 2 persons

Ingredients:

  • 2 medium size zucchini
  • 100gr Greek style yoghurt
  • 40gr walnut
  • A glove of garlic
  • A table spoon of olive oil
  • Pinch of salt and pepper

Preparation:

  1. Get all the ingredients ready and put on the work top.
  2. First, grate the zucchinies
  3. Put the olive oil onto frying pan and heat up.
  4. Then, add grated zucchinies and fry them in gentle fire about 10min or less. Zucchinies should be soft but not soggy.
  5. Add the crushed garlic, bit of pepper and salt, and crushed walnuts.
  6. Fry another few minutues and put on the side to cool down for few minutes.
  7. Put the yoghurt into a bowl, and mix it until it gets smooth.
  8. Now, you can mix yoghurt with zucchinies.
  9. It is ready to serve.
