This is a recipe from my best friend, Sebnem. I did not have time to try. As soon as, I try it, I will add more details of the recipe here.
Preparation time: 15 mins
Cooking time : 40 min
Serves for : 6 persons
Ingredients:
- 1 water glass of grated carrot
- 1 water glass crashed walnut
- 1.5 water glass sugar
- 1 water glass sunflower oil
- 2 water glass of flour
- 3 eggs
- 1 tea spoon vanilla
- 2 tea spoon baking powder
Preparation:
- Heat the oven 180C, fan oven.
- Crack the eggs in a bowl and beat them with mixer until it gets fluffy.
- Add sugar and keep mixing.
- Then, add sunflower oil and continue mixing until mix is smooth. Instead of using just sun flower oil, you can use half glass of sunflower oil and half butter.
- Add flour slowly and keep mixing flour with other ingredients.
- With flour, add baking powder and vanilla.

When you have a smooth cake mixture, add carrot and walnut, and mix
with a spoon not a mixer. - Gently, mix walnut and carrot.
- Now, you can pour the cake mix into cake form which is already greased with butter and a bit of flower.
- Bake the cake about 40minutes and check with toothpick whether it is cooked enough. If it needs more baking, keep the cake in the oven another 10min.
- Do not forget carrot cake is always bit moist, as long as it does not stick to toothpick too much, it is baked enough.
- Take the cake out of the oven and leave for rest on kitchen worktop.
